Piri Piri Honey Chicken with Potatoes

The Piri Piri Spice Rub and Chilli Honey do make this spicy so its one for the chilli lover but you can also use the Chicken Spice Rub and Turmeric Honey for a mild version hope these recipe bring you some joy and full bellies.

What you’ll need:
1 kg chicken legs
3 lemons, juiced, and zest from 1 lemon (keep lemon skins for roasting later)
5 garlic cloves, peeled and chopped
Small knob of fresh grated ginger
3 teaspoons Not Without Spice Piri Piri Spice Rub
1 tub of tomato paste
4 tablespoon olive oil divided
2 tablespoon Not Without Spice Chilli Honey or natural honey
500g washed baby potatoes - larger ones can be cut in half
Salt and pepper

How to Cook:
Combine the lemon zest, lemon juice, garlic, ginger, Piri Piri Spice Rub, Chilli Honey, tomato paste and 2 tablespoons of olive oil in a bowl.
Place chicken in a seperate bowl and toss through half the piri piri paste mix. Set aside for 30mins to an hour (for tastier results place in the fridge overnight).
Preheat oven to 220°c. Put a roasting pan in the oven while it preheats and heat pan for 10 minutes.
Toss the potatoes in a large bowl with the rest of the olive oil and a generous amount of salt and pepper. Remove hot pan from the oven and toss the potatoes and any oil from the bowl into it.
Place the chicken legs on top of the potatoes. Place back into the oven and roast 20 minutes. Stir the chicken legs and potatoes and add the rest of the Piri Piri paste over the chicken while adding lemon skins. Roast for another 20 minutes or until falling apart.
Let chicken rest for 5 minutes before serving with potatoes and lemon slices, salad.
