Smokey Slow Cooked Brisket

In this recipe I use the Pork Spice Rub not the Beef Spice Rub. Mainly because the Pork Spice rub has a lovely smokey flavour that is just perfect with the smokey bbq sauce, but mostly because the Beef Spice Rub is a little spicy. I love it, the girls do not.

For Sauce
1 bottle of Not Without Spice Smokey BBQ Sauce
¼ cup of honey
2 tablespoon apple cider vinegar
2 tablespoon olive oil

For Brisket
1 red onion thinly sliced
2-3 teaspoons of Not Without Spice Pork (or Beef) Spice Rub
1-2 Kg Beef Brisket

Preheat the oven to 150c. Place red onion on the bottom of a roasting pan. Add meat on top then coat the meat with our Pork Spice Rub. Set aside while making sauce.
In a sauce pan on a low to medium heat, place the whole bottle of our Smokey BBQ Sauce, honey, apple cider vinegar and olive oil (often here I also fill the empty bottle of sauce with warm water, shake bottle and add to the saucepan). Warm for about 5 min until honey has melted. Pour the sauce over the top of the meat. Cover the dish tightly with foil. Bake for 4-5 hours or until meat is tender. After 1 1/2 hours, check every 40mins, pouring pan juices over the top of the brisket. Remove foil for the last 30 mins. Once ready, let the meat rest for 10 minutes. Thinly slice against the grain. Enjoy with roasted potato or sweet potato chips and coleslaw.
